This is the eighth installment of a multi-post series on Viking Professional products. This post will be focusing on ventilation systems.Ventilation is one of the most important parts of cooking. It keeps odors, grease droplets, smoke and steam from dispersing throughout your kitchen and home, and lets you keep cooking for longer. Without a proper ventilation system, the kitchen can become uncomfortable rather quickly depending on what you’re preparing, and airborne grease can stick to surfaces making after dinner clean-up a disaster. As important as they are, they can also be rather bulky.
Rear Downdrafts work silently behind rangetops and cooktops to eliminate smoke and odors in the most minimally invasive way. Downdraft hoods reverse the direction of the smoke and feature ducts that run through the floor. This style is a good fit for those who generally don’t cook with many herbs and spices, or prepare greasy foods with powerful smells. When selecting a ventilation system, the smallest possible size is the size of your rangetop or cooktop. In this case, bigger is definitely better because the hood will trap more of the unwanted fumes and particles.
Chimney Wall and Island Hoods are a great option for those who don’t mind a larger piece of machinery and desire a stronger filtration process. This system of ventilation comes down over the cooktop or rangetop and sucks in all the debris. It gets the job done, but it is a larger option and sports exposed vent stacks, which may be undesirable to some.
A Wall Hood is a median option that gives you powerful suction, and minimal invasion. The Wall hood fits between cabinets over the cooking source and blends in with the cabinets. The hood resembles a deck awning and the stacks are often not visible. The Wall Hoods blend in beautifully with cabinets and can be customized for further camouflage if necessary, or you can use the hood as an accent piece in your kitchen.
